1 can chickpeas *garbanzo beans > rinsed > drained
1 TBSP lemon juice
1 garlic clove > halved
3/4 cup onion > chopped
1 1/2 cups avocado > peeled > cubed
1 green chile pepper > seeded if you want less spice > diced
Salt & Pepper > to taste
1 cup tomato > chopped
1/2 cup onion > chopped
Pinch of cilantro & or chives *for garnish
Throw everything but 1/4 cup of the tomatoes, the cilantro, and chives in food processor.
Process until your desired consistency *can be smooth, chunky, or in between.
Add in salt and pepper to taste.
Transfer to a serving bowl. Mix in some of the unprocessed, chopped tomatoes. Garnish with remaining tomatoes, cilantro and chives.
